Would this be vulnerable to the same jamming that was done against starlink? My reason for asking is that the site is asking for donations to send more starlinks to Iran, so would it be safe to assume they are aiming to use it as the delivery mechanism for files too.

Basically any satellite signal can be jammed. You just have to make noise louder than the signal from the satellite, either on all frequencies, or on the specific frequencies the satellite uses
You can also jam the uplink, by making noise louder than the ground terminals make, pointing upward at the satellite.
Great but it's just a content consumption solution, isn't it?
If you consider something like reading Wikipedia consumption, then yes.
The point is people who have a need for this kind of solution also have a need to communicate among themselves. Perhaps to organize against those that make this solution necessary.
This sounds a lot like Othernet. Was that the inspiration? Is this like a continuation or evolution of the project?
Probably related but it is more accessible than Othernet for people in Iran right now. You only need - Digital Satellite Receiver (Set-top Box) with USB port to record TV programs - USB Flash Drive - A device to decode the video
Knapsack is a horrible word. I can’t believe people choose to say this word instead of backpack.
I think Knapsack is an older word compared to Backpack, but it has connotations of being more rugged or tougher than a Backpack.
